The Burial of the Sardine (El Entierro de la Sardina) is one of the most representative and satirical celebrations marking the end of Carnival in many regions of Spain and Latin America. This festivity is characterized by a parade that parodies a funeral procession, culminating in the burning of a figure, usually a sardine, as a metaphor for the conclusion of Carnival excesses and the beginning of a period of reflection and renewal. Its symbolism lies in bidding farewell to the old to make way for a new phase filled with energy and hope for change.
On the island of La Palma, this tradition is celebrated in various municipalities, such as Santa Cruz de La Palma, Tazacorte, Los Llanos, Puntallana, and Barlovento. However, in Los Sauces, in the northeast of the island, it reaches exceptional significance. This event has been recognized as a Festival of Tourist Interest in the Canary Islands, highlighting its importance within the region's festive calendar. Additionally, the Burial of the Sardine in Los Sauces attracts thousands of people from across the island who come to enjoy this unique celebration.
